Misono 440 Santoku 18cm - Used, professionally sharpened
This is a used Misono 440 knife with a blade length of approximately 18cm, which has been re-sharpened.
Based on its shape and blade length, it is likely a Santoku knife, model No. 881 (it's difficult to be certain as current Santoku models have black logos).
According to the manufacturer's website, the steel is 16-chrome stainless steel. This suggests it is likely JIS standard SUS440. The ease of sharpening and the ability to achieve a sharp edge are similar to Gresten steel.
The tip was originally chipped, so the blade path was reshaped starting from a 220-grit whetstone. There were noticeable scratches, so the flat side of the blade was also smoothed with whetstone slurry to blend the scratches. It was then finished with 400, 1000, 2000, and 8000 grit whetstones, and the flat side was polished with cleanser and Pikal.
The edge was finished with 2000, 3000, and 8000 grit whetstones.
The edge retention is a bit delicate, but a sharp and good edge has been achieved.
There is some black rust near the bolster and the outer part of the tang that could not be completely removed. There are also remaining sharpening scratches on the blade. Please be aware of this in advance.
