This is a professional Kai Saki knife from Endo Shoji.
Kai Saki knives are not commonly seen, but they are not exclusively for opening shells. Think of their shape as a smaller version of a Yanagiba knife.
The blade is also thin, making it ideal for filleting small fish like horse mackerel.
The condition is relatively clean, but as this is a used item, there are minor scratches and dirt on the handle.
The sharpening process was finished in the following order: #1000 grit → #3000 grit → #6000 grit → natural finishing whetstone.
It is sharp enough to cut newspaper cleanly.
As it is made of steel, it will rust if left wet.
There is no ura-suki (hollow grind on the back).
The handle has been recently replaced and is in relatively clean condition.
Wax has been applied to the tang insertion area to prevent water from entering.
The knife will be shipped with rust-preventive oil applied, so please wash it before use.
