* As these are live plants, they grow daily. Some seedlings may have had their tips pruned to encourage branching of the vines.
These are climbing plants, so they can be trained on stakes, fences, or nets. Repeated pruning will encourage branching, allowing them to be used as a sunshade curtain or grown compactly like morning glories in a lantern style. They can also be grown in planters.
* Okinawa spinach is a perennial vine of the Basella family, very easy to grow. In tropical environments, it has lush green leaves year-round. However, in Honshu, where winters are cold, it goes dormant during winter, surviving as tubers or vines, and sprouts again the following spring.
In Honshu, it can be harvested from around May in spring until early winter.
In cold regions with snow and freezing temperatures, dig up the tubers to store them where they won't freeze and plant them when it warms up, or grow them indoors.
In warmer regions without snow, the leaves will fall in winter, but they can be left planted.
* Tubers form underground, and bulbils form in the leaf axils. They have no bitterness, so the leaves can be eaten raw, used in tempura, stir-fries, soups, omelets, or microwaved for ohitashi (blanched greens) or salads. They can also be added to natto. The bulbils can be used to make bulbil rice, tempura, or stir-fries. The bulbils are fluffy and very delicious.
