Salt-cured wakame is made by blanching fresh wakame harvested during its peak season and then preserving it with salt to enhance its shelf life. Compared to dried wakame, it offers a richer, fresher flavor and a characteristic thick, chewy texture.
● Proper Rehydrating and Preparation Method
Salt-cured wakame is very salty and must be desalted before use.
Rinse: Place in a bowl and thoroughly rinse the surface salt under running water.
Soak: Soak in plenty of water. The time depends on your preference; 1-3 minutes is recommended for a chewy texture, and about 5 minutes for a softer texture.
Drain: Drain well in a colander and lightly squeeze by hand if necessary. The weight will increase to approximately 3.5 times its original weight when rehydrated.
