These are Hokkaido's Nemagaridake bamboo shoots.

Harvested today.

They have very little bitterness, so you can boil them, peel them, and eat them right away.
They are also delicious with mayonnaise as is. They are a versatile ingredient suitable for tempura, bamboo shoot rice, simmered dishes, stir-fries, miso soup, pan-frying, oden, egg drop soup, mixed with canned mackerel in miso, dressed with vinegar and miso, stir-fried with green peppers and onions, pickled in mentsuyu, chawanmushi, and more! (^-^)

◎They spoil from the base, so be sure to cut off the base when cooking.
